What I think most critics of conspiracies do not understand

Personally, there is that separation of the scientific method, scientific facts, and the scientific community.

I can't speak for any other conspiracy theorists, but I have faith in the scientific method because there is no point in believing in living in a randomized universe/simulation.
Of course, even the most rigorous methods are subject to skewed data, inadequate instruments, and malevolence actors; but at least as a concept, the scientific method holds true to me.

That being said, scientific facts, and especially the scientific community are not as "pure" as the scientific method, more prone to manipulation & corruption.

Think of WWII Germany, and their eugenics scientists and numerous studies.

Asking "why would they lie" before you know they lied is futile because you are merely hunting for speculation, guessing their intent based on your own personal experience.
And frankly speaking, your own personal experience is very limited, especially compared to cogs as big as statecraft and the likes.
Doubt is only ever truly useful when dealing with subject matters you believe in.

TL:DR - believe in what you KNOW, trust no one.
